Talk to me about going out-out and you’ll probably be met with a complete look of confusion and a small glimmer of hope for a pizza party with chill vibes. Amirite? Not one to knowingly turn down a perfectly good pizza, I headed along to a post-launch dinner at the beautiful and not-at-all imposing Da Maria restaurant in Seminyak, Bali back in November and just had to share my adoration for their wares with you all.

New Italy

Headed up by Australian Restaurateur, Maurice Terzini, Da Maria is a modern Italian restaurant nestled just away from the bustle of Seminyak. It’s facade is instantly recognisable; clean blue and white decor with a beautiful lobby, matched perfectly to its’ interiors and, indeed, its’ social media platforms. I just love a uniform look. It’s not unusual to find a plethora of international cuisine on each road in Bali and Da Maria is a wonderful example of that. Delicious classics and humble favourites reworked in a manner that suits only Da Maria.

After being introduced to the team and being very swiftly accommodated with glasses of signature Da Maria cocktails, we were treated to a scintillating select menu that Maurice himself had put together for us. There’s little else better than the restauranteur and head chef himself coming out to have a chinwag and introduce the menu to you, is there? Open from 5pm daily with an awesome late night pizza and bar service, it’s the only place that’d convince a hermit like I to head out past 9pm. And that’s just the sort of place Da Maria is: enchantingly friendly and abuzz with excitement. The interiors are fanciful yet brilliantly new, an adorable garden provides a great place to escape the music and crowds, the open kitchen keeps the vibe lively, the wait staff are curtly dressed in monochromatic Nike Roshe Ones. And the pizza ovens? They’re freshly imported from Italy. It’s legit, guys.

Let the feast begin

First up was a delectable platter of finest prosciutto crudo and burrata - moreish, seasoned just-so and a great flavour to start off the evening. We moved on quickly to wood roasted beetroots with a ricotta salad and radicchio. I’m never the hugest fan of beets but this dish was absolutely incredible: bursting with flavour, colour and texture. I’d easily eat bowlfuls of this with a pizza!

We were treated to lamb skewers on the table - beautifully cooked and not at all overdone - which was such a treat having *just* broken my vegetarianism for our holiday. 10/10 would recommend to any meat lover.

Finally, Maurice came back to the table with the main attraction: a freshly prepared Antica Margherita pizza. Prepared by Italian chefs and cooked in a genuine local lava oven, the Da Maria pizza dough is naturally fermented for 24 hours and inspired by the Neapolitan way, just as it has been for 3 generations. Now, I’d say I’m a pizza enthusiast to say the least but this was simply next-level. A smoky crust, doughy and crispy all at once, topped with fresh parmesan and basil and a rich tomato base. Harvey and I both agreed we could eat this pizza for the rest of our lives - it was that good.

After-hours

Always one for a party, our wonderful hosts Lia and Heva kept us out all night with a plethora of well-curated cocktails. (Although I did of course switch back to gin midway through the evening!) The nightlife at Da Maria is pretty damn fun: casual tables and a dance floor that grows throughout the evening. Chill music and those bloody pizza ovens that stay open until 2am. What more could you want?
